According to the report of the United Nations Health Organization, the carcinogenic factors on the cutting board are mainly various bacteria caused by the deterioration of food residues, such as Escherchia coli,Staphylococcus, N.gonorrhoeae and etc. Especially aflatoxin which is considered as class one carcinogen.It also can’t be eliminated by high temperature water. The bacteria on the rag is not less than that of the cutting board. If the rag that has wiped the cutting board and then wipes other things, the bacteria will spread to other things by the rag. A study by National Sanitation Foundation(NSF) approved in 2011 that the bacterial concentration on the chopping board was 200 times higher than that on the toilet, and there were more than 2 million bacteria per square centimeter of the chopping board.
Therefore, health experts suggest that changing the cutting board every six months. If it is used frequently and without classification, suggest to change the cutting board every three months.
